Maslenica – Sheets Pie – Love At First Bite For some, food is just a delicious dish and they only want to enjoy it, without thinking about how and when it was made. However, I am used to the fact that when I make a dish for the first time, I find out at least a few basic facts about a dish, because then I seem to feel a whiff of the region from which the dish comes.

Is the Origin of Maslenica Known?

When it comes to Maslenica, it was not easy to find out details, such as the place of origin, the time of its origin, and how it originated. Still, some interesting facts are known. Interestingly that Maslenica is an ancient type of developed pie that was once made mainly from black flour. It was considered a poor pie. It’s known to be made in Turkey, BiH, Montenegro, Albania, but in recent years it has become more common in other countries around the world.

Something else is interesting, this pie is mostly made in BiH, and there are many ways in which it is made. It’s called empty pie because no special filling is put in it except liquid ingredients. But you will hardly try an empty and more beautiful pie than Maslenica in your life, believe me. My children are in love with buttermilk, and when I make it, I see their heads peeking into the oven, waiting for my favorite pie to be ready.

 

 

Where Does Pita Come From?

I don’t know if you’ve ever thought about the origin of the pie. Pita is a Greek word, and it means a type of dish that is made from thinly stretched dough, ie. bark and various hopes. From the earliest times, pies have been a popular food, and the first knowledge about them comes from ancient Egypt and ancient Greece.

When the Ancient Romans conquered Greece, they were won over by the taste of pies, so they took the recipes with them. As the Roman Empire expanded, the sweetness of pie traveled through Europe and the Mediterranean countries, and each country adapted the recipes to its customs and food.

The European history of pie is especially diverse. The Normans used to send the baked pie as a gift to the king for Christmas.

In the Middle Ages, pies were sold on the streets, as we would call them today, by commercial travelers. Pie sellers were popular because most homes did not have ovens.

With the settlement of North America and Australia, pies continue their journey around the world.

 

Turkish Influence Is Important

All food historians agree that the crust originated in Turkey. A researcher of the history of Middle Eastern cuisine, Charles Perry, wrote about this in an article on the history of baklava.

He writes that Turkish nomads in the early Middle Ages were very fond of thin bread that would be baked quickly. It was a small step from thin bread to stretching the crust. Stretching of the crust appeared around 1500 in Istanbul, probably in the Sultans. Pies can be made of crust, folded or bent, they can be made of kneaded dough with butter, margarine, cheese, puff pastry, fruit, meat, vegetables, and even without the crust.

They can be served as appetizers, main dishes, and desserts. Another type of dish where your imagination does not have to set limits.

You knead a soft dough that doesn’t stick and is easy to shape. Divide the dough into two equal parts, wait a bit, then sprinkle with flour and roll out. There is also an easier way, which is to develop smaller pieces of dough, the size of a baking tray. For every piece of dough, pour over the filling. Then bake the pie at 220 degrees. Finally, pour it over and return it to bake.

Total Time 1 hour 20 minutes

Ingredients

  • 1 kg flour (600 g black and 400 g white) or (4 and a half cups
  • black and 3 cups white)
  • 2 teaspoons salt
  • 2 teaspoons oil
  • Warm water (about 500 ml of water)
  • Ingredients for the filling
  • 400 g sour cream (2 cups)
  • 150 g of butter (0,7 cups)
  • A cup of oil
  • A little salt
  • Ingredients for topping
  • 2,5 dl of water (or milk)
  • A little salt

Instructions

Dough Preparation

Knead a soft dough from the listed ingredients - flour, salt, oil, and water. The dough is kneaded when it becomes soft and easy to shape. Divide the dough into two equal parts and let it stand. Sprinkle the surface with flour to help roll out the dough. If it is easier for you, tear the dough into balls, then develop pieces the size of a baking tray.

If you are a master of developing, then cut the developed dough with a knife to the size of a baking tray and coat each arranged sheet (a piece of dough) with filling. Repeat the process until the last piece of dough.

Bake the pie at 220 degrees for about half an hour to 40 minutes. It's very important to pour boiling water over the pie, then when it turns brown, and then return it to the oven for another 10 minutes.

Preparation Of The Filling

Put the listed ingredients - sour cream, butter, salt - in a saucepan and melt on the stove. Sprinkle a few tablespoons of the filling on each piece of dough you put in the pan.

Notes

Make sure the dough is soft to make it easier to roll out. You will achieve this by carefully mixing and letting it stand for about 10 minutes, best covered with transparent foil. Maslenica is best with yogurt, tomatoes, or cucumbers.
